I ran across this recipe and made a modified version of it – original is linked below. I did make some rosemary focaccia bread to go along with this and it turned out amazing! You can also make this into a cold pasta salad as well. If the bread didn’t turn out, that is what I was going to do.
Ingredients:
– Genoa Salami – I used maybe 1 1/2 cups of small, diced pieces.
– Pepperoni – I used maybe 1 1/2 cups of small, diced pieces.
– 1/4 pound of ham – I used about 3/4 of the package that I had bought from the deli, diced in small pieces.
– Banana peppers – I used about a cup of these, diced in small pieces.
– 1 small red onion minced – two are in the picture, but I ended up using only one.
– 2 TBSP chopped parsley – I used fresh from our aerogarden.
– 1/4 cup olive oil
– 1 TBSP chives
– 1 TBSP basil
– 1 tsp garlic powder
– 1 tsp crushed red pepper flakes
Other optional ingredients: capicola, cheese diced up in little cubes, roasted red pepper, Italian seasoning instead of chives and basil.
Directions:
- Combine all of the above into a bowl and mix well to combine. Feel free to put the oil, chives, basil, garlic powder and red pepper flakes in a separate bowl first and then pour over the rest of the ingredients.
- Once all is combined, serve immediately or chill and then serve.
Since we had made some rosemary focaccia bread, I put the dip into a little tray to make it more presentable, along with the bread.
