Today was the second day of this custom challenge and I started to feel a bit sluggish earlier, but I feel as if that was from lack of fruit. I had a pretty strong temptation to have one of the cookies with sprinkles on the kitchen table smothered with icing but I chugged some water and had a different snack instead. When stressed, it can be hard to stick to a commitment around healthy eating! I am still drinking coffee with creamer throughout this challenge, as well as having my adult beverages. 🙂 Today I did not feel as bloated as I did yesterday!

30 Minutes Activity/Exercise: I did a 32 minute walk with Jane Fonda on Apple Fitness.
Drink 80 oz. Water: Done – the 40 oz. Sursip cup I have and a glass straw help!
Read 10 pages: Done – I am reading a book called ‘Knock’ by Rebecca Otis Leder.
Eat Healthy: Breakfast was a smoothie that DID NOT turn out. The nutribullet that I have crapped out and I tried to use the food processor instead – didn’t work out too well to say the least. I did have a great Dave’s Killer Bread Everything Epic bagel with an egg and a couple slices of cheese, with mayo/horseradish sauce! For lunch, it was rotisserie chicken and the Banza chickpea pasta with tajin seasoning sprinkled on top. For a snack I had cheese cubes from the Amish heated just a bit and then I dipped them in ranch dressing. For dinner I had the rest of a butter garlic pasta with black bean beef burger bites and a cream cheese yogurt salsa taco dip.
A few things I’m still keeping an eye out on:
- Amount of sugar in a serving – if it’s more than 4g, I am being cautious
- Amount of protein in a serving – I’m aiming for at least 20g of protein per serving each meal
- Amount of fiber in a serving – I’m doing my best to aim for 20g of fiber each day, but that sure can be difficult!
- If I have a sweet tooth craving, I turn on the keurig and add creamer to my cup of coffee
