Chicken Bacon Ranch Lasagna

I made this recipe years ago and recently ran across it again, so I made sure we had all of the ingredients.  You’ll need a 9×13 baking dish.

Ingredients:

  • 2-12 oz cans of evaporated milk 
  • 2 oz. dry ranch dressing mix – you may need more possibly.
  • 3 cups cooked chicken, cubed/shredded – my better half grilled two chicken breasts and this ended up being 3 cups worth.
  • Bacon – cooked (optional) – add as much as you want.  Ham or Kielbasa is another option.
  • Lasagna – 6-9 noodles (cooked al dente)
  • 1 1/2 cups of mozzarella cheese
  • 1 1/2 cups colby jack cheese 
  • Parmesan cheese (optional)

Directions:

  1.  Preheat oven to 350.
  2.  If you don’t want to boil the noodles, place the noodles in the 9×13 baking dish and pour hot water over them.  They will soften enough by the time everything else is ready.   
  3. Open the cans of evaporated milk and place in a 3 quart sauce pan.  
  4.  Add the dry ranch dressing mix.  Stir and turn the burner on medium-low heat.  This will seem very runny.  Stir frequently and you’ll be able to tell when it starts to thicken up.  Add more ranch mix if you prefer!  This may take about 20 minutes to fully thicken.  


  5.  Spray the 9×13 baking dish and add half of the lasagna noodles.  
  6. Add half of the chicken and bacon (or any other meat you add in to this).
  7.  Add half of the sauce on top of the meat mixture.  I placed the sauce in a big measuring cup so it could be easier to pour.
  8.  Add the cheese.
  9.  Repeat the layers once more.


  10.  Once  the oven is preheated, place in oven uncovered for 30-35 minutes.  Once it starts to bubbled, it’s pretty much ready to enjoy!
