This recipe is inspired by a Romanian dish, called Romanian Varza Calita. It is great served with bread or potatoes. Depending on the size of the cabbage you have, some ingredients may need to be doubled.

Ingredients:
- 1 head of cabbage
- 1 package kielbasa (you can also use shrimp or chicken in place of the sausage)
- 1-2 onions
- 1/2 TBSP pink salt
- Avocado or Olive Oil
- 1 TBSP minced garlic
- 1 TBSP parsley (I used fresh)
- 1 tsp basil
- 1 tsp garlic salt
- 1 tsp dried ranch seasoning (optional)
- 1-2 cans diced tomatoes
Directions:
- Prepare the cabbage so that you can shred it with a knife, or you can use a food processor. I used a knife. I cut the cabbage in half, then cut it in half again. The core I then cut off, then chunked up the cabbage and placed it in a bowl.

- Sprinkle the pink salt over the cabbage and stir. Set aside for now.

- Cut the kielbasa. I like cutting kielbasa when it is frozen and will cut in half so that it’s more like a half moon shape. If you do this, please be careful, as the knife could easily slip.

- Add the avocado oil to a pot on the stove, then add the minced garlic. Turn the burner on high.

- When the minced garlic starts sizzling, add the kielbasa at this time and stir.

- Cut the onion and then add to the kielbasa; stir.

- Add the diced tomatoes, parsley, basil, garlic salt and dry ranch dressing, along with any other seasonings that you’d also like to use; stir.

- Add the cabbage to the pot – if it’s a lot of cabbage, it will be best to add half, stir, then add the remaining and stir.

- Turn the heat down to medium-high and cover with a lid. Stir periodically. Depending on how much cabbage you have, as well as how thick/thin the cabbage is cut, it may take up to an hour to fully cook. It is ready once the cabbage has become about transparent.
