Venison Heart – Pan Cooked

For those of you that love a good venison heart recipe, or looking to try something new, the heart is very tender and this recipe is very flavorful.  I love having this with mac & cheese.

Ingredients:

  • 1 venison heart
  • 1/4 cup red wine
  • 2 TBSP Liquid Aminos (or soy sauce)
  • 1 TBSP Olive Oil
  • 3-4 cloves garlic
  • 1 TBSP parsley
  • 1/2 tsp pink Himalayan salt
  • 1/2 tsp black pepper
  • 1 small onion (not pictured)

Directions:

  1.  If you have not already done so, clean the heart with cold water, getting rid of any blood clots.  The water should be clear after cleaning the heart properly.
  2. You can either trim up the heart prior to marinading or after.  These pictures are shown after marinading the heart for a few hours.
  3.   Regardless of when you trim the heart, place all ingredients above in a zip lock bag with the venison heart and let sit for 4-5 hours, or overnight.
  4.   If you are making any side dishes, start these first because when you start to pan cook the heart, it will quickly cook (usually under 5 minutes, depending how well you want to have the meat cooked).
  5.   We slice the heart, which you’ll first want to cut at the bottom of the fat line at the top.
  6.   I guessed on where to cut at the top.  Trim any white pieces off of the heart, as this is not something you want to eat.  Be careful with using a sharp knife.
  7.   Slice the heart into ‘steaks’.  When these are sliced, be sure to remove any of the stringy white pieces inside.
  8.   These ‘steaks’ were cut a bit ahead of time, so I placed them back into the marinade that was put into a bowl and then back into the fridge.
  9.   Once ready, warm a skillet up to a 7 or 8 on the stove and add the heart slices.
  10.   As mentioned earlier, these cook really quick – about 1-2 minutes per side.  Cook longer on each side if you want the meat a bit more well-done.
  11.  Remove from the skillet once the desired level of readiness is determined.  My husband loves venison heart that is medium-rare… I’m more so one that loves it more medium-well.    Enjoy!
