Greek Yogurt Biscuits

If you love biscuits and want a healthier version, this is our new favorite recipe.  The original is at the bottom, as I have made some adjustments.  This recipe makes about 8 large biscuits, or 10-12 smaller ones.

Items needed:

  • Cookie sheets (one large or 2 smaller ones)
  • Parchment paper
  • Drinking glass or biscuit cutter
  • Rolling pin (or you can use your hands to press out the mix)

Ingredients:

  • 3 cups all purpose flour
  • 1 TBSP sugar (optional)
  • 2 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt (I used pink Himalayan salt)
  • 1/4 tsp garlic salt (optional)
  • 3/4 cup unsalted butter(softened or melted)
  • 3/4 cup plain Greek yogurt
  • 1 large egg
  • 3 TBSP cold water
  • 1 large egg (for brushing on the biscuits)

Directions:

  1.  Preheat the oven to 400 F.
  2.  Set a glass aside, which will be used to cut out the biscuits, unless you have a biscuit cutter.
  3.  Put parchment paper down on the cookie sheet(s).
  4.  In a larger mixing bowl, add the dry ingredients and stir together – flour, sugar (optional), baking powder, baking soda, salt & garlic salt.
  5. Sprinkle flour on the counter, where you will be rolling the biscuits at.
  6.  Crack one of the eggs in a small bowl, whisk and set aside.
  7.  In a small bowl, add the butter, Greek yogurt, egg, and water, then mix together.
  8.  Add the liquid ingredients together with the flour mixture.  I used a wooden spatula to help mix a lot of this together.  It is important to not overmix.  Use your hands to get as much of the flour mixed in as possible.
  9.  A rolling pin can be used if needed – however, I just used my hands.  Fold the biscuit mix a few times on the floured countertop, to help get the fluffy layers.  Spread out the mix to about 1 – 1 1/2 inches.  Use the glass, or a biscuit cutter, to cut the biscuits.
  10. Once all of the biscuits are on the cookie sheets, use a basting brush to brush the whisked egg on top.
  11.  Place biscuits in the oven (as long as it is ready to go) and set a timer for 12 minutes.  Once golden brown, remove the cookie sheets with an oven mitt or potholders.
