If you love biscuits and want a healthier version, this is our new favorite recipe. The original is at the bottom, as I have made some adjustments. This recipe makes about 8 large biscuits, or 10-12 smaller ones.
Items needed:
- Cookie sheets (one large or 2 smaller ones)
- Parchment paper
- Drinking glass or biscuit cutter
- Rolling pin (or you can use your hands to press out the mix)

Ingredients:
- 3 cups all purpose flour
- 1 TBSP sugar (optional)
- 2 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt (I used pink Himalayan salt)
- 1/4 tsp garlic salt (optional)
- 3/4 cup unsalted butter(softened or melted)
- 3/4 cup plain Greek yogurt
- 1 large egg
- 3 TBSP cold water
- 1 large egg (for brushing on the biscuits)
Directions:
- Preheat the oven to 400 F.
- Set a glass aside, which will be used to cut out the biscuits, unless you have a biscuit cutter.
- Put parchment paper down on the cookie sheet(s).
- In a larger mixing bowl, add the dry ingredients and stir together – flour, sugar (optional), baking powder, baking soda, salt & garlic salt.

- Sprinkle flour on the counter, where you will be rolling the biscuits at.
- Crack one of the eggs in a small bowl, whisk and set aside.

- In a small bowl, add the butter, Greek yogurt, egg, and water, then mix together.

- Add the liquid ingredients together with the flour mixture. I used a wooden spatula to help mix a lot of this together. It is important to not overmix. Use your hands to get as much of the flour mixed in as possible.
- A rolling pin can be used if needed – however, I just used my hands. Fold the biscuit mix a few times on the floured countertop, to help get the fluffy layers. Spread out the mix to about 1 – 1 1/2 inches. Use the glass, or a biscuit cutter, to cut the biscuits.
- Once all of the biscuits are on the cookie sheets, use a basting brush to brush the whisked egg on top.

- Place biscuits in the oven (as long as it is ready to go) and set a timer for 12 minutes. Once golden brown, remove the cookie sheets with an oven mitt or potholders.
